Sweet Potato 'Burgundy'
Ipomoea batatas 'Burgundy' has the most intense colour of all the Ipomoea cultivars, also the most intense flavour finishing with a slightly nutty flavour. One might start to integrate sweet potatoes every day in the kitchen! In addition, this variety has the shortest cultivation time and can already develop sufficiently large tubers after 100 days.
Size: rooted plant in a 2.5in pot.
Sweet Potato shoots and young leaves are edible and are considered a tasty vegetable in many parts of the world. Just don't harvest too many as you want your plants to grow and form good size tubers for harvest.
To harvest, let the frost kill your vines, cut your Vines off. Waiting at least 10 days before you dig. This is a curing process giving time and allowing the skins to thicken. This will help them store longer. If you harvest some of them before this time treat them like new potatoes, no need to peel. Wash, cook and serve with the thin skins.
