Ipomoea batatas ‘Orleans’ is an orange flesh, light rose skinned sweet potato. It is a twin to ‘Beauregard’ in many ways. Another great variety for our short season, this variety can be harvested after 100 days.

Sweet Potato shoots and young leaves are edible and are considered a tasty vegetable in many parts of the world. Just don’t harvest too many as you want your plants to grow and form good size tubers for harvest. 

To harvest, let the frost kill your vines, cut your vines off. Waiting at least 10 days before you dig. This is a curing process giving time and allowing the skins to thicken. This will help them store longer.  If you harvest some of them before this time treat them like new potatoes, no need to peel. Wash, cook and serve with the thin skins.
